Spicers Vineyards Wedding Photographer, Pokolbin
Spicers Vineyards Estate is one of the most intimate places to get married in the valley. It's a small luxury retreat on Hermitage Road with its own eight-acre vineyard, natural bushland on one side, and views across the vines to the Brokenback Range. With exclusive use, the whole estate is yours for the day, and the ceremony, photos, dinner and your room for the night are all a short walk apart.
As a Hunter Valley wedding photographer, I love weddings here because nothing feels rushed. Small guest lists mean real conversations, and that's when the best candid photos happen. This guide covers the ceremony spots, the wet-weather plan, sunset timing and where I take couples for portraits.
Spicers Vineyards Estate at a glance
- Where: 555 Hermitage Road, Pokolbin, in the heart of the Hunter Valley wine country.
- Ceremony spots: on the lawn among the gum trees and pepper trees, or with the vineyard rows as your backdrop.
- Reception: Restaurant Botanica (up to 60 seated or 80 for cocktails), the Harvest Room for up to 12, or the standalone Vineyards House with its own pool.
- Best for: elopements, micro weddings and small weddings with exclusive use of the estate.
- Best light: the last 45–60 minutes before sunset, in the vines with the range behind you.
- Wet-weather plan: if it rains, the ceremony moves inside to the library, and covered verandahs work beautifully for portraits.
- Travel: no travel fee. The Hunter Valley, Port Stephens and Newcastle are all included.
Ceremony spots at Spicers Vineyards Estate
Under the big gum on the lawn. Most couples say their vows under the large old gum tree on the lawn, with the vines and the range behind them. The canopy softens harsh afternoon sun, so faces stay even and nobody squints, and I can step back for a wide view that shows the estate, your guests and the mountains in one frame.

In the vines. For a smaller group or an elopement, a ceremony with the vineyard rows as your backdrop is lovely. It's quiet, it's private, and the light through the vine leaves late in the day is beautiful.
Because the estate is small, everything is close. Your guests can walk from the ceremony to canapés in a couple of minutes, which gives us time for family photos without anyone waiting around.

Wet-weather plan
If it rains, the ceremony moves inside to the library, so a rainy forecast doesn't mean a scramble. On the day, I work with whatever the weather brings. The verandahs and French doors around the estate give soft, even light for portraits, Restaurant Botanica's large windows keep the room bright, and if the rain eases we'll grab umbrellas and head out to the vines for ten minutes. Overcast days often give the most flattering light of all.
Sunset and golden hour at Spicers Vineyards
Golden-hour portraits work best in the last 45–60 minutes before sunset, and I plan about 15 minutes there. Approximate sunset times in Pokolbin:
- Summer (Dec–Feb): about 7:45–8:05pm
- Autumn: about 7:15pm in March, falling to about 5pm by May
- Winter (Jun–Aug): about 4:55–5:25pm
- Spring: about 5:45pm in September, then about 7:05–7:35pm after the clocks change
Check the exact time for your date. Daylight saving moves it by an hour in early April and early October.

My favourite photo spots at Spicers Vineyards Estate
- The vineyard rows. The estate's own vines, with the range on the horizon. This is where I like to be for golden hour.
- The big gum tree. Even after the ceremony, it's a lovely spot for a relaxed portrait or a quiet moment together.
- The verandahs and French doors. Perfect for getting-ready photos and for soft light on a hot or wet day.
- The surrounding bushland. Just outside the estate, tall trees, dirt tracks and fallen logs give a completely different, earthy mood.
- The sky at dusk. On the right evening, the sky over the vines turns dramatic, and a silhouette against it is hard to beat.

A sample Spicers Vineyards timeline
Mid-March, Package One (5 hours), sunset about 7:13pm. I'd start with getting ready in your suite at 2:45pm, then the ceremony under the gum at 4:45pm and family photos from 5:15 to 5:35pm on the lawn. While your guests enjoy canapés, we do relaxed portraits in the nearby bushland, then golden hour in the vines around 6:15–6:45pm. After your entrance into Restaurant Botanica, coverage finishes at about 7:45pm. In winter, move the ceremony to about 2:30–3pm.

Your reception and how I photograph it
Restaurant Botanica has large windows and statement light fittings, so it stays bright well into the evening and looks beautiful set with long tables and flowers. With 60 guests or fewer, it's a room where speeches feel personal and everyone's laughing together, which makes for honest, candid photos. For the smallest celebrations, the Harvest Room seats up to 12, with botanical wallpaper and warm timber. One couple summed up their day here simply: "The food was amazing, and everyone had a fantastic time."
